A fascinating and thoroughly geeky release here from the innovators up at InchDairnie Distillery! This 2017 vintage is made with a mash bill – or grain recipe – split as 53% malted rye and 47% malted barley. It was then fermented with a specially selected yeast that works well with rye, before being distilled in a Lomond Hill still (a pot still with plates in its neck) and matured in new charred oak casks. There’s just nothing else like it in Scotland! 

Tasting note:

Nose: Beautifully rich with deep spices, a toasty oakiness, hedgerow berries and an underlying vanilla ice cream.

Palate: Surprisingly bready with drier fruits, tobacco, black pepper and iced buns, plus a hint of a rye-like menthol. 

Finish: Medium to long with more spices.
