Cognac is a world-renowned French brandy made from distilled wine, celebrated for its elegance, depth, and craftsmanship. Produced exclusively in the Cognac region of south-west France, it carries an Appellation d’Origine Contrôlée (AOC) designation, meaning its production is strictly regulated to preserve quality and authenticity. This combination of tradition, terroir, and technique has made Cognac a benchmark for fine aged spirits.

The region is divided into six crus, or growth areas, each with its own character: Grande Champagne and Petite Champagne are prized for producing eaux-de-vie with exceptional ageing potential; Borderies offers floral, nutty notes; Fins Bois and Bons Bois produce fruit-forward styles; and Bois Ordinaires yields lighter, faster-maturing spirits. Soil composition, rich in chalk in the top crus, and climate both play a critical role in shaping the base wine and, ultimately, the finished Cognac.

Cognac production begins with white grapes, predominantly the Ugni Blanc variety, valued for its high acidity and low alcohol content. After harvest, the grapes are pressed and fermented into a dry, acidic wine. Distillation takes place in traditional copper pot stills, known locally as alambics charentais, and must be completed by 31 March following the harvest. The process is carried out twice, a double distillation, to concentrate flavour and alcohol, producing a clear spirit called eau-de-vie.

Ageing is a defining stage in Cognac production. The eau-de-vie must be matured in French oak casks, often sourced from Limousin or Tronçais forests, for a minimum of two years. Over time, the spirit interacts with the wood, gaining colour, aroma, and complexity. Notes of vanilla, spice, dried fruit, and nuts develop alongside a softening of the alcohol. Cognac is typically blended from eaux-de-vie of different ages and crus, with the master blender’s skill ensuring consistency and balance from year to year.

Labelling terms indicate the youngest eau-de-vie in the blend: VS (Very Special) must be aged at least two years; VSOP (Very Superior Old Pale) at least four years; and XO (Extra Old) at least ten years. Beyond these categories, houses may release vintage-dated Cognacs from a single harvest, prestige cuvées, or extra-aged expressions showcasing the pinnacle of their blending artistry.

The flavour profile of Cognac varies by style and ageing. Younger VS bottlings tend to be fresh, fruity, and vibrant, well-suited for cocktails such as the Sidecar or French 75. VSOPs strike a balance between fruit and oak influence, making them versatile for sipping or mixing. XO and older expressions are rich and layered, with extended finishes and a complexity best appreciated neat.

Famous houses such as Hennessy, Rémy Martin, Martell, and Courvoisier dominate global recognition, but smaller producers and independent bottlers offer unique interpretations, often highlighting single vineyards, limited editions, or unblended eaux-de-vie.
