Tapatio is a revered name in the world of Tequila, celebrated for its traditional production methods, full-bodied flavour, and deep ties to Mexico’s artisanal distilling heritage. Produced at La Alteña Distillery in the highlands (Los Altos) of Jalisco, Tapatio is the creation of the legendary Camareno family, who have been making tequila since 1937. Over four generations, the family has preserved the craft of slow, small-batch production, making Tapatio a favourite among bartenders, tequila aficionados, and purists who value authenticity over mass-market uniformity.

Origins and Heritage

Tapatio was founded by Don Felipe Camareno in the town of Arandas, Jalisco, an area famed for its rich red volcanic soil and ideal agave-growing conditions. The brand’s name, “Tapatio,” is a colloquial term for a person from Guadalajara, the cultural heart of Jalisco, a fitting nod to its roots.

Today, Tapatio remains under the stewardship of the Camareno family, with master distiller Carlos Camareno at the helm. The distillery is also known for producing other acclaimed tequilas, such as El Tesoro and Ocho, but Tapatio retains its own distinctive identity.

Production Philosophy

Tapatio is crafted using 100% Blue Weber agave, grown for around 7–8 years before harvest. The agaves are cooked slowly for several days in traditional brick ovens, which helps to develop deep, caramelised flavours. After cooking, the piñas are crushed using a mechanical roller mill to extract the sweet juice (aguamiel), which is then fermented in open-air wooden vats with natural yeast — a key factor in its complex, earthy aroma.

Distillation takes place in small copper pot stills, in two slow passes, which preserves the character of the agave and allows for a concentrated, flavoursome spirit. Tapatio’s tequilas are bottled at various strengths, with some expressions offered at traditional Mexican high proof, delivering exceptional flavour intensity.

Flavour Profile

Tapatio is known for its robust, earthy, and spicy style, often described as more “old school” than many contemporary tequilas. Expect aromas of cooked agave, black pepper, and herbal freshness, with a palate that can range from bright and citrus-led (Blanco) to deep and oak-driven (Añejo and Extra Añejo).
