The first whiskey to be distilled in Dublin in nearly 50 years, this single pot still whiskey pay homage to the old style made famous by the now closed Dublin Whisky Distilleries. Crafted using a mashbill consisting of 50% unmalted barley and 50% malted barley which is then triple distilled and matured in American oak, bourbon and sherry casks.
Nose: Cream soda, roasted almonds and sweet pink grapefruit.
Palate: Peaches in syrup, poached pears and a wonderfully creamy mouthfeel. All balanced by star anise and allspice.
Finish: Muscovado sugar with a touch of drying spices.
