Los Siete Misterios is a premium mezcal brand from Mexico that has become internationally recognised for its dedication to traditional production, biodiversity of agave species, and commitment to supporting the communities that make its spirits. Founded in 2010 by Julio and Eduardo Mestre, the brand was created to preserve the artisanal mezcal-making traditions of rural Mexico while introducing the spirit to a global audience in its purest, most authentic form.

The name Los Siete Misterios (“The Seven Mysteries”) reflects the sense of discovery and cultural richness surrounding mezcal. Each bottling represents a different expression of agave, terroir, and craftsmanship, highlighting the unique flavour profiles that arise from Mexico’s diverse mezcal-producing regions.

Production is entirely artisanal, using ancestral methods that have changed little over centuries. Agave plants, which can take between 7 and 30 years to mature depending on the species, are harvested by hand at peak ripeness. The piñas (hearts) are roasted in underground earthen pits, often lined with volcanic stone and fuelled by wood, giving many mezcals their signature smoky undertone. Once cooked, the agave is crushed by a traditional tahona (stone wheel) pulled by horse or mule, before the fibres are left to ferment naturally with wild yeasts in open-air wooden vats. Distillation takes place in small clay or copper stills, depending on the expression, producing small batches that retain all the complexity of the raw materials.

One of the hallmarks of Los Siete Misterios is its focus on single-agave mezcals. The range has included agaves such as Espadín, Tobalá, Coyote, Mexicano, Barril, and Arroqueño, each offering distinct flavours, from the floral and tropical fruit notes of Tobalá to the earthy spice of Barril. The brand also produces blends that combine species for layered complexity.

Expressions are typically non-aged (Joven) to preserve the bright, fresh character of the agave, though some bottlings are rested for short periods in glass to soften the spirit without introducing oak influence. Bottling is done without additives, colouring, or flavouring, ensuring a completely natural product.

Flavour profiles vary widely depending on the agave and production style. An Espadín mezcal from Los Siete Misterios might offer balanced smoke, roasted agave sweetness, and herbal freshness, while a clay-pot-distilled Tobalá could reveal ripe mango, white flowers, and a rounded, earthy minerality. Across the range, the mezcals tend to have elegant, precise flavours rather than overpowering smoke, making them appealing to both mezcal newcomers and seasoned agave drinkers.

Sustainability and community support are central to the brand’s ethos. Los Siete Misterios works with small, family-run palenques (mezcal distilleries) across Oaxaca and other mezcal-producing states, paying fair prices for agave and reinvesting in local infrastructure. This decentralised model allows each mezcalero to maintain their own identity and traditional methods while benefiting from a wider distribution network.
