Intensely rich and flavoursome, the expression is drawn from 40% new oak and 60% first-fill ex-Kentucky bourbon casks. It’s a recipe that lets the vibrancy of the new oak shine amid the rustic, coastal peat and oily, rich spirit. Plus, it’s bottled without chill-filtration or added colour. Heavily Peated Virgin Oak makes a stunning smoky Highball cocktail and a delicious Penicillin serve, and also shines neat and over ice. It’s peated whisky your way – and we think it’s superb.
Tasting notes:
Nose: Lively and powerful, the nose opens with a ruckus of medical smoke, tomato leaf and elastoplast notes, plus vibrant orange peels, black pepper, liquorice and charred fruits. With time, it all gets more industrial, with complex green bell pepper, fennel and even Olbas oil coming through. Milk chocolate provides a creamy textural backdrop.
Palate: The complexity develops with an influx of roadwork smoke and cinnamon baking spices, along with the juiciness of black cherry, sugar confectionery, and strawberry jam on slightly burnt toast. Dandelion and burdock contributes to a rooty quality, alongside eucalyptus and aniseed.
Finish: Incredibly long, with lingering kerosene and sweet chilli chocolate.
