A lesser-seen, ancestral mezcal here from Siete Misterios made using both Coyote and Arroqueño agave varieties. Herbal and citrus-driven with pine needle notes, the agave is processed in an earthen oven before being hand-crushed with mallets. Wild fermentation and clay pot distillation give it its green character – as traditional as it gets.
