A big, bold, pronounced mezcal made in the tropical hills surrounding Santa Maria Albarradas village. The Wild Jabali mezcal varietal gives a surprising flavour profile, and is absolutely one to be explored. A mix of sweet, savoury and even cheesy, this is a masterclass in how including a portion of tails – the last part of the distillation run – can add a good amount of character to a spirit.
Nose: Opens with cinnamon buns and apple strudel, before a funky parmesan cheese and organic zip comes through.
Palate: Zestily bright and dynamically floral, tarragon spice and violet flowers build on the complexity from the nose.
Finish: Long, aromatic and incense-like.
