Del Maguey Chichicapa 48% ABV
A fascinating mezcal made from agave grown in the low-elevation, acrid valley close to the village of San Baltazar Chichicapa. The flavour profile is best described as a mix of savoury and sweet: nuttiness and corn alongside chocolate. It’s undergone a wild fermentation followed by a double distillation in wood-fired, copper stills.
Nose: Inviting yet rich, with sweetcorn, asparagus and cooked agave alongside orange peel and gentle cinnamon.
Palate: The profile of the nose builds with added creaminess, a sweet almond nuttiness, fresh mint leaf and milk chocolate.
Finish: Medium length with a drying cinnamon spice.
