A wonderful single cask release from our friends at independent bottler James Eadie. For this expression, the iconic Islay distillery has been finished for nine months in a European oak Palo Cortado sherry hogshead, injecting all manner of fruity zip into the smoky spirit. Bottled at a natural cask strength of 56.1% ABV at natural colour and with no chill-filtration, this is a remarkably fresh perspective on Caol Ila.
Tasting note:
Nose: All the seaside smoke you’d expect from Caol Ila with additional orchard fruit, fresh lemon zest and strawberry leaf, along with a subtly herbal element.
Palate: Roast pork and apple sauce accompany the oily first impression, before guava, melon, black pepper and gentle cinnamon come through.
Finish: Medium to long, with a lasting meaty smoke.
