Milk & Honey Peated 3 Year Old 2019 Thompson Bros 57.1% ABV

An independently bottled release from Tel Aviv maker Milk & Honey (now known as M&H Distillery) via celebrated duo the Thompson brothers. Bottled at natural colour with no chill-filtration, it’s a brilliant opportunity to explore the peated side of production at the distillery. Don’t be alarmed by the young age statement – Tel Aviv’s climate makes for accelerated maturation. This is a far deeper, richer and more complex spirit than you’d expect at three years.

Tasting notes:

Nose: Earthy, almost vegetal herbs come through ahead of a maple sweetness that weaves its way through the peat. Subtle tropical fruit notes, too. 

Palate: The peat smoke becomes earthier, with nuttiness and sweet spices arriving. There’s a slight rubbery texture, along with a black pepper lift.

Finish: Long with a herbal element in with the lingering smoke.
