A fascinating mezcal here, made in the village of Santa Catarina. The expression has been naturally fermented, before undergoing triple distillation in a traditional, ancestral clay still with bamboo tubing. In line with tradition, a chicken breast is hung in the still for the third distillation, alongside mountain apples, plantains, plums, pineapples and almonds – NOT one for veggies.
Nose: The smoke is pronounced and rich, with apple peel, citrus fruits, coriander and green bell pepper adding complexity.
Palate: Round, mouth-filling, and full of character. There’s a surprise floral quality, alongside a savoury richness, roadwork-like smoke, and apple sauce.
Finish: Long, ashy, with more of that coriander.
