Unlike the majority of cognacs on the market, which are blends of many eaux-de-vie from different years and producers, Hermitage focuses on rare, often single cask, age-statement expressions that have been matured to their peak before bottling, making them particularly sought after by collectors and serious spirit enthusiasts.
The brand was founded by David Baker, a long-standing cognac specialist and founder of The Cognac Expert Company, with the mission of sourcing and curating the finest examples from small, family-owned producers across the Cognac region. By working directly with growers and distillers, Hermitage is able to secure parcels of cognac that represent the very best of a specific cru, vintage, and style.
Hermitage bottlings are drawn from across Cognac’s key crus — Grande Champagne, Petite Champagne, Borderies, and Fins Bois — each imparting a unique profile to the spirit:
• Grande Champagne - the premier cru, producing the most elegant, long-lived cognacs with floral, fruity delicacy.
• Petite Champagne - slightly more robust, with excellent ageing potential.
• Borderies - known for nutty, violet-scented cognacs with a creamy texture.
• Fins Bois - fruity, aromatic, and often more forward in style.
All Hermitage cognacs are made from Ugni Blanc grapes (with occasional Folle Blanche or Colombard), harvested and pressed before undergoing a natural fermentation. Distillation takes place in traditional Charentais copper pot stills, typically double-distilled to produce a clear, aromatic spirit. Maturation then occurs in Limousin or Tronçais oak barrels, where the interaction between wood, spirit, and air slowly builds complexity, colour, and texture.
What sets Hermitage apart is its focus on natural ageing. Many commercial cognacs are coloured with caramel and adjusted with sweeteners or boisé (oak essence) to standardise flavour; Hermitage prides itself on offering cognac exactly as it was matured, without artificial enhancements. This approach preserves the individuality of each vintage and cask.
The flavour profiles of Hermitage Cognac are as varied as their origins and ages. Younger expressions may show fresh grape, citrus, vanilla, and floral notes, while older vintages deliver layers of walnut, dried fruit, toffee, cigar box, and rancio, the deep, nutty, oxidative character prized in mature cognac. The texture is typically rich and velvety, with a long, lingering finish that reflects decades of patient maturation.
