The team at Chapter 7 spotted this 11-year-old Tomintoul Amontillado sherry cask – and had to release it for us as part of their Monologue series! Celebrated for being smooth and mellow, the distillery character pairs wonderfully with the nutty, toffee, fruit-driven elegance of Amontillado-seasoned oak. Just 351 bottles have been released.

Tasting note:

Nose: Fascinatingly complex, there’s a nutty sponge cake in with fresh green apple peel, black pepper, and an aromatic hay note. 

Palate: There’s a gentle minerality in with the nutty sweetness. Salted caramel sits happily alongside pecan nuts and freshly ground coffee.

Finish: Warming with streaks of black pepper in with more apple.
