A fascinating sherry-forward expression from Dalrymple, otherwise known as Ailsa Bay. The team at Little Brown Dog bottled this cask, which is bursting with mouth-watering dark chocolate, dried fruit and Christmas spice notes. Distilled back in 2012, it’s understood that this single sherry butt has been ‘teaspooned’ with spirit from another distillery,, meaning it can’t be labelled as a single malt.
Tasting notes:
Nose: A classic of the Oloroso genre, there’s all manner of rich, dried fruits, alongside the darkest of chocolate, cinnamon, nutmeg and a hint of Cognac.
Palate: More baked goods come through on the palate, alongside toasted almonds and a forest-floor earthiness.
Finish: Medium length with drying cinnamon.
