Caol Ila 15 Years Old 2007-22 Wilson & Morgan Oloroso Sherry Finish 55.5% - 70cl
Another great experiment in the marrying of the contrasting flavours from Oloroso casks, one sweet the other a drier fruit cask with a very smoky Islay malt.
Nose: Some splintered oak, hints of old leather-bound books, soft parchment, Pampas grass, spiced fruit, and a soft minty note, With a nice balance of candied orange and peach skins, soft smoke, and a little hint of wet peat.
Palate: The wood is showing through on the opening of the palate, red grapes, ripe orchard fruits, sandalwood, charred oak, spices all wrap themselves together to deliver a very taste driven dram, the finish is a nice combination of cask aged sherry and balsamic vinegar, this is a tangy note before a vanilla and hard toffee tone adds a rich subtle tone, with some candied orange to round the dram off nicely.
