This process, which can take place before, during, or after fermentation, increases the alcohol content (typically to 15–22% ABV) and can profoundly influence the flavour, sweetness, and ageing potential of the wine. From the rich, nutty complexity of sherry to the deep fruit intensity of port, fortified wines are among the most versatile and long-lived beverages in the world.
A Tradition with Centuries of History
Fortification began as a practical solution for preserving wine during long sea voyages in the age of exploration. By adding a dose of grape spirit, merchants ensured that their wines could withstand the journey from Europe to distant markets without spoiling. Over time, the practice evolved into a deliberate stylistic choice, giving rise to distinct fortified wine traditions in regions such as Port, Sherry, Madeira and Marsala.
Each has its own production methods, grape varieties, and flavour profiles.
How Fortified Wines Are Made
The timing of spirit addition is key to determining a fortified wine’s style:
• Before fermentation finishes - kills the yeast, retaining natural grape sugars for a sweeter style (e.g. port, sweet Madeira).
• After fermentation finishes - results in a dry style, as all sugar has been converted to alcohol before fortification (e.g. dry sherry, dry Madeira).
Ageing can take place in casks, sometimes for decades, in systems such as solera (used for sherry) or via long oxidative maturation (used for tawny ports and certain Madeiras).
Serving and Pairing
Fortified wines can be served as aperitifs, digestifs, or dessert pairings, and they also excel in cooking and cocktails. They can be enjoyed:
• Chilled (e.g. fino sherry, white port) for a refreshing aperitif.
• Room temperature (e.g. tawny port, Madeira) to highlight richness.
• Paired with cheese, chocolate desserts, or savoury tapas.
