Independent, family-owned Islay farm distillery Kilchoman has reached 16 years! The team filled their first cask back in 2005, and now we have this limited expression to enjoy. This is a vatting of 21 predominantly bourbon casks peated to 50ppm, yielding 5,000 bottles. There is some Oloroso sherry in the mix too! Released at natural colour with no chill-filtration, it’s incredibly exciting to see how far Kilchoman has come.
Tasting note:
Nose: Gorgeously fruit-forward with baked apples, plum jam, pears, sweet spices and croissant notes in with a waft of smoke.
Palate: The peat influence becomes more smouldering, with nutmeg and an earthiness in with tropical fruit
Finish: A meatier smoke dries into a dusty sweetness.
