From India to the World

Paul John whisky is produced by John Distilleries, founded in 1996 by Paul P. John. While the company originally focused on the Indian domestic market with popular brands like Original Choice, Paul John’s vision was to create a world-class single malt that could stand alongside Scotland’s best.

In 2008, the Goa-based single malt distillery began operations, and within a few years, Paul John’s whiskies were winning awards at major international competitions. The brand now enjoys a strong presence in over 40 countries.

Goa: A Unique Maturation Environment

Goa’s tropical climate plays a defining role in the Paul John style. Average temperatures are significantly higher than in Scotland, leading to faster maturation and a higher “angel’s share” (loss of whisky through evaporation, often 8–10% annually, compared to Scotland’s 2%).

The result is that even relatively young Paul John whiskies develop concentrated flavours, rich texture, and deep colour in a short period of time. This accelerated maturation, combined with careful cask selection, gives the whiskies a signature intensity without sacrificing balance.

Production Philosophy

Paul John single malts are made from six-row Indian barley grown in the Himalayan foothills. Six-row barley has a higher protein and tannin content than the two-row barley typically used in Scotland, contributing to a robust, slightly nutty flavour profile.

Key elements of production include:
• Copper pot still distillation in traditional Scottish-style stills.
• Non-chill filtration for maximum flavour retention.
• Natural colour, with no additives.
• Cask maturation in ex-bourbon barrels, sherry casks, and occasionally wine casks.

Some expressions also incorporate peated malt imported from Scotland, producing a smoky style with an Indian twist.
