A fascinating blended malt here from independent bottlers Thompson Bros. Comprising 80% Nc’Nean liquid with 20% from Dornoch, a total of eight different yeasts were used during fermentation. Three hailed from sustainability-focused Nc’Nean, including a rum strain, while the team at Dornoch made use of five different brewing varieties. Aged for over five years, it’s thought to be the world’s first organic blended malt. Just 377 bottles were ever released – this is sure to sell fast.
