Kilchoman Fino Sherry Cask Matured 50% ABV

A rare expression indeed: a smoky, pronounced Islay whisky fully matured in ex-Fino sherry casks. The Kilchoman team took 20 butts and combined them after five years of ageing. Fino is light, fresh and and quite crisp, so the result is distinct to other, more commonly spotted ex-sherry cask whiskies. It’s fascinating – and a masterclass in complementing a smoke-forward distillate.

Tasting note:

Nose: The classic Kilchoman peat is there, but it’s in beautiful harmony with an aromatic seaside note, an almond nuttiness, and an olive brine quality.

Palate: Orchard fruit comes through, alongside honey roasted pecans, citrus peels and more classic bonfire smoke. 

Finish: Long, lingering and smoke-forward.
