Holyrood New Make / Brewer's x Distiller's Yeast / 60% / 50cl
The ale yeast we use here is an American Ale yeast that adds a clean mouthfeel with notes of peach and soft citrus. This adds additional flavour to our new make against our Distiller's Yeast, M Strain, which is super efficient at converting fermentable sugars.
Nose: Fresh cut ripe pears with a hint of melon and peach, some soft chewy notes.
Palate: Rather mellow on the palate given its ABV of 60% Vol with a rich creamy soft white sponge, pears, apples and mango with melon, sweet citrus notes abound to deliver a lingering finish.
