Former British colonies, including Jamaica, Barbados, and Guyana, are known for richer, more robust molasses-based rums, often distilled in traditional pot stills that preserve heavy, aromatic congeners.

Maturation plays a defining role in rum’s character. Tropical ageing in oak casks accelerates flavour development, producing deep colour and complexity in a shorter time than cooler climates. Casks may previously have held bourbon, sherry, or other wines and spirits, each influencing the final flavour profile. While some rums are bottled unaged for brightness and purity, others spend decades maturing, developing notes of toffee, dried fruit, spice, and oak.

Rum’s versatility has made it a cornerstone of classic cocktails. Light rums are the foundation of the Daiquiri and Mojito; aged and spiced rums shine in drinks like the Mai Tai or Dark ’n’ Stormy. Overproof rums, bottled at higher strengths, bring intensity to tiki cocktails and punches. Premium sipping rums, meanwhile, are enjoyed neat or over ice, where their complexity can be fully appreciated.

In recent years, rum has experienced a renaissance similar to that seen in whisky and gin.
