The whiskey matured in Gilbey’s own sherry casks, and in 1912, it adopted the name “Redbreast,” inspired by the robin redbreast, a favourite bird of the company’s chairman. This association with sherry cask maturation became central to the brand’s identity.

After the decline of the Irish whiskey industry in the mid-20th century, Redbreast disappeared from the market for a time. In the 1990s, Irish Distillers (owners of Jameson and Midleton Distillery) revived the brand, using the same single pot still style and strong emphasis on sherry-seasoned oak. The relaunch marked the beginning of Redbreast’s transformation into one of the most respected names in premium Irish whiskey.

Flavour-wise, Redbreast is full-bodied, rich, and silky. The nose typically offers dried fruit, orange peel, vanilla, and baking spice. The palate brings a creamy texture, layered with toffee, sultanas, roasted nuts, and a gentle peppery warmth from the unmalted barley. The finish is long and warming, often with lingering sherry sweetness.

Redbreast has won numerous awards, including repeated titles for “World’s Best Irish Whiskey” at the World Whiskies Awards.
