The distillery also uses American oak ex-bourbon barrels to add vanilla, honey, and citrus brightness, achieving a signature balance between richness and vibrancy.

The distillery uses an unusual combination of still sizes, four wash stills and four spirit stills of different shapes and capacities, allowing for a carefully tailored spirit cut. This produces a robust, weighty distillate capable of long maturation, particularly in active sherry casks.

The core range includes the Dalmore 12 Year Old, celebrated for its balance of citrus, chocolate, and spice; the 15 Year Old, with deeper sherry influence and rich dried fruit; and the 18 Year Old, offering exceptional depth and complexity. Older expressions, such as the 21, 25, and 40 Year Old, are highly prized by collectors and connoisseurs alike. Dalmore is also known for ultra-premium releases, including limited editions like the Constellation Collection, the Dalmore 62 Year Old, and King Alexander III, the latter finished in six different cask types for extraordinary complexity.

Independent bottlings of Dalmore are rare, as most of the distillery’s spirit is reserved for official releases, making each bottle with the stag emblem highly recognisable and sought after.
