Kilchoman 11 Year Old Family Collection 54.7%
Part of the celebrated first edition of the Kilchoman Family Collection, this 11-year-old expression is bold, characterful, and captures in a bottle what makes the Islay maker so special. It’s been drawn from ex-sherry casks, and shows off the evolution of the distillery character as it reaches higher age statements (the wider collection showcases the influence of both ex-sherry and ex-bourbon barrels over time). It was made using barley peated to 50ppm sourced from the Port Ellen maltings, and is released at natural colour and with no fill-filtration. Casks for the collection were chosen by the founding Wills family during their annual evaluation of maturing stocks.
Celebrated as Islay’s farm distillery, family-run Kilchoman was one of the first makers in the ‘new wave’ of Scotch whisky producers, setting up operations at Rockside Farm back in 2005. Founder Anthony Wills often speaks about how it was a crazy decision – but his gamble paid off, and today Kilchoman is one of Scotland’s most-loved whisky producers. Fast-forward more than two decades and his wife Kathy runs the visitor centre, and his sons are also heavily involved in the business. Together, they champion a 100% Islay philosophy, even growing their own barley on-site. Essential bottlings to try include Machir Bay, a beautifully balanced peated expression which celebrates the dramatic neighbouring beach, and Rockside, made entirely on-site from seed sowing to bottling.
