Tequila is the most famous agave spirit and production is focussed around the town of the same name in the state of Jalisco. It has emerged from the wider mezcal category as it is regarded as having a particular elegance and can only be made from one type of agave: the Blue Weber. Whilst agave sugars can be topped up with other sugars to cretate mixto tequila, the best spirtis will be 100% Agave. It may be unaged - Blanco - lightly rested called Joven - or if aged for between 1 month and 1 year, known as Reposado. Younger tequilas exhibit more agave-based flavours and a stronger connection to their terroir. Long-aged anejo and extra-anejo tequilas show more cask inluence. Anejo is aged for at least three years and takes on flavours similar to a whisky or brandy due to the cask influence.
