Noah’s Mill is a small-batch Kentucky bourbon renowned for its full-bodied flavour, high proof, and old-fashioned craftsmanship. Produced by the Willett Distillery (also known as Kentucky Bourbon Distillers) in Bardstown, the self-proclaimed “Bourbon Capital of the World”, Noah’s Mill has earned a reputation among enthusiasts as one of the most characterful bourbons on the market.

Originally launched in the 1990s as part of Willett’s small-batch collection, Noah’s Mill was initially bottled with an age statement of 15 years. As demand grew and older stocks became scarcer, the age statement was removed, allowing the distillery greater flexibility in blending while maintaining the rich, mature profile that fans expect. Today, Noah’s Mill is a blend of carefully selected bourbons of varying ages, chosen for their depth, complexity, and compatibility.

Bottled at 114.3 proof (57.15% ABV), Noah’s Mill delivers intensity without sacrificing balance. The high proof means the bourbon retains a concentration of flavour, while still being smooth enough for sipping neat or with a splash of water.

Production and Maturation

Like other Willett bourbons, Noah’s Mill is made from a traditional mash bill of corn, rye, and malted barley, with a higher rye content contributing spice and structure. Distillation takes place in copper pot stills, which help create a robust, oily spirit with plenty of body.

Maturation occurs in new, charred American oak barrels, stored in Kentucky’s variable climate. The region’s hot summers and cold winters cause the spirit to move in and out of the oak’s char layer, extracting deep flavours of vanilla, caramel, and spice while mellowing the raw edges of the distillate.

Its depth of flavour makes it ideal for slow sipping, though its proof also allows it to shine in classic bourbon cocktails like the Old Fashioned or Manhattan, where the spirit’s intensity stands up to bitters and vermouth.
