Spirits made from agave plants have traditionally been found throughout Central America and the southern states of what is now the USA. Mesoamericans brewed agave juice to create a 'wine' called pulque, and distillation was introduced by the Spanish. The category breaks down into 5 main subtypes: Tequila is the most famous and, whilst is can be made in 5 states, Jalisco accounts for over 90% of production and is where the town of Tequila is found. Mezcal is surging in popularity, can be made of more than 250 types of agave and in 9 states of Mexico. Raicilla is essentially mezcal made in other states and Bacanora, often called Mexican moonshine, is only found in the mountains of Sonora. Finally, Sotol is made from the Dasyliron, which is not technically an agave but part of the asparagus family. Production is in Chihuahua, Durango and Coahuila.
