Single Malt Whisky

Single malt whisky is one of the most celebrated and recognisable styles in the whisky world, prized for its depth of flavour, individuality, and connection to place. By definition, a single malt whisky must be made from 100% malted barley, distilled at a single distillery, and aged in oak casks for a minimum of three years. This category is most closely associated with Scotland, but distilleries across Ireland, Japan, Taiwan, and other whisky-producing nations also create outstanding single malts in their own distinctive styles.

The “single” in single malt refers to production at a single distillery, not to a single cask or batch. Within that distillery, malted barley is mashed, fermented, and distilled, typically in copper pot stills, before the new-make spirit is matured. The use of pot stills, with their varied shapes and sizes, plays a key role in shaping character: tall stills tend to produce lighter, more refined spirits, while shorter stills yield heavier, oilier flavours.

In Scotland, single malt production is spread across multiple regions, each with its own stylistic tendencies. Speyside malts are often elegant and fruit-driven, with honey, apple, and vanilla notes. Highland single malts range from light and floral to rich and robust, while Islay malts are famous for intense peat smoke, maritime brine, and earthy complexity. Lowland malts are typically gentle and grassy, and Campbeltown produces oily, saline drams with distinctive depth. Outside Scotland, Irish single malts are often triple-distilled for extra smoothness, Japanese distilleries craft precise, balanced malts influenced by Scottish tradition, and newer producers in Taiwan, Australia, and the United States are bringing innovative approaches to the style.

Cask maturation is central to single malt whisky’s flavour. Ex-bourbon casks made from American oak impart vanilla, coconut, and citrus brightness, while sherry casks from Spain’s bodegas add dried fruit, nut, and spice richness. Many distilleries use a combination of cask types, sometimes finishing their whiskies in port, wine, rum, or other seasoned casks for added complexity. Maturation time also plays a significant role: younger malts may highlight vibrant malt character and fresh fruit, while older expressions reveal layers of oak influence, spice, and subtle secondary flavours.

Single malt whiskies are often bottled as part of a distillery’s core range, with age statements such as 10, 12, or 18 years, but the category also includes non-age-statement (NAS) releases, single cask bottlings, and limited editions. Independent bottlers bring further variety, offering unique interpretations of a distillery’s spirit and cask stock.

The appeal of single malt whisky lies in its individuality. Each distillery’s water source, still design, fermentation methods, and maturation conditions create a signature style. For enthusiasts, exploring single malts is a journey through diverse flavours and traditions, from the smoke and salt of Islay to the orchard fruit and honey of Speyside.

Our Single Malt Whisky selection spans classic distilleries and emerging producers, offering expressions that range from approachable entry-level bottles to rare, collectible releases. Whether you enjoy your whisky neat, with a drop of water, or as part of a special tasting flight, single malt whisky offers an unrivalled combination of heritage, craftsmanship, and flavour.
