Islay distillery Caol Ila is celebrated for its bold complexity and expressive elegance – and this 15-year-old release is a fantastic example. Bottled as part of our Soho Selection collection, it was distilled back in 2008 and matured in a first-fill Palo Cortado octave cask. The results are mouthwatering. Expect salted caramel, barbequed beef and date putting notes, all enveloped in that characteristically maritime smoke. Lovely.
