Independent bottler Wilson & Morgan is back again with a stunning bottling – this time a complex expression from Islay’s Caol Ila distillery. Aged for a total of ten years, with an 18-month finish in Pedro Ximénez, it’s a stunning combination of smoke and winey fruit. It’s an Islay single malt best enjoyed with friends over time – there’s a lot to unpack, and it’s all delicious.

Tasting note:

Nose: Immediately incredibly fruity, with cherries, figs and citrus peel in with bonfire smoke and roadworks.

Palate: Lots more orange peel and red fruits, along with an earthiness, eucalyptus, and even a dash of balsamic vinegar.

Finish: Long and mineral-like, with a crack of black pepper.

About Caol Ila

Caol Ila single malt Scotch whisky is one of Islay’s most versatile and widely admired distilleries, producing both peated and unpeated styles that range from maritime and smoky to fresh and citrus-driven. Founded in 1846 by Hector Henderson, Caol Ila takes its name from the Gaelic for “Sound of Islay,” the narrow strait that separates Islay from the neighbouring island of Jura. Its coastal location, overlooking the water, not only offers stunning views but also influences the whisky’s character with a subtle saline note.

For much of its history, Caol Ila has been a quiet workhorse of the Scotch industry. The distillery’s clean yet smoky spirit has long been a vital component in Johnnie Walker and other premium blends. Rebuilt and modernised in the early 1970s, Caol Ila is now the largest distillery on Islay by production capacity, yet it retains a distinctive character thanks to its unique combination of tall copper stills, long fermentation, and slow distillation.

The classic peated Caol Ila style is defined by a measured smokiness, typically around 30–35ppm, that balances clean, briny freshness with layers of citrus, apple, and light herbal notes. Unlike the intense medicinal profile of Laphroaig or the earthier peat of Lagavulin, Caol Ila’s peat is often described as crisp and almost floral, making it one of the most approachable smoky malts. The distillery also produces unpeated expressions for part of the year, showcasing a fruity, grassy spirit that reveals the underlying distillate without the overlay of smoke.

Maturation typically takes place in American oak ex-bourbon barrels, which preserve the spirit’s brightness while adding gentle vanilla and sweetness. Sherry casks are also used in some special releases, adding richness and depth. The core range includes the Caol Ila 12 Year Old, a benchmark Islay dram that offers the perfect balance of smoke, citrus, and sea air; the Distillers Edition, finished in Moscatel casks for a sweet-fruity twist; and limited higher-age releases such as the 18 and 25 Year Olds, which show a softer, more rounded peat alongside complex oak influence.
