A tradition rediscovered
Irish whiskey’s early identity was shaped not only by distilleries but also by bonders — merchants who purchased spirit, matured it, and sold bespoke blends through local pubs and shops. This symbiotic system flourished until the late nineteenth century. As the Irish whiskey trade declined and distilleries closed, the remaining producers began bottling their own whiskey, effectively ending the practice of bonding by the 1930s.
The inspiration for J.J. Corry came decades later. While exploring an antique shop in Kilrush, a coastal town near her family farm, Louise McGuane discovered an empty Victorian bottle labelled:

Research revealed a merchant established in 1890 who sold bonded whiskey alongside everyday goods. Intrigued by this forgotten craft, McGuane set out to revive bonding for a modern audience.
In 2013, she founded J.J. Corry in Cooraclare, County Clare. Drawing on experience with global spirits companies including Moët Hennessy (LVMH), Pernod Ricard, and Diageo, she created a brand rooted in collaboration and transparency. J.J. Corry became the first licensed whiskey bonder in Ireland in over fifty years and the first licensed whiskey producer in County Clare in more than a century.
County Clare and the Atlantic ageing environment
J.J. Corry’s rackhouse sits on McGuane’s family farm along the Wild Atlantic Way, Ireland’s rugged western coastline. This cliff-lined stretch faces persistent Atlantic winds and a saline, humid atmosphere.
Such conditions create a distinctive maturation environment. Temperature fluctuations encourage the whiskey to more actively move in and out of the wood, while the maritime air contributes to a dynamic ageing process. The result is maturation influenced by both climate and cask — an approach central to the house style.
Production and the ‘“library of flavours’”
Rather than distilling on site, J.J. Corry commissions new make spirit and also matures selected Irish whiskey with prior age. Casks are sourced from wineries, distilleries, and cooperages worldwide and filled at the Clare rackhouse.
Each maturing cask is categorised by flavour profile and entered into what the brand calls its flavour library. This catalogue allows the blending team to construct balanced, fruit-forward whiskeys for continuous releases, limited editions, and private bottlings.
Cask selection plays a central role. For example, some expressions mature in bourbon and American craft whiskey casks sourced from Kentucky, Tennessee, and New York. These casks contribute notes of vanilla, caramel sweetness, and gentle spice while allowing orchard fruit and citrus characteristics to remain prominent.
