A fantastic expression from family-run Islay distillery Kilchoman. A single-farm single malt bottling, every step of production from sowing the barley seeds to bottling takes place at the distillery’s home: Rockside Farm. It’s lightly peated and aged for a minimum of 11 years in both ex-bourbon and ex-sherry casks. Delicate and complex, Rockside offers an unusual perspective on the Islay distillery more often associated with heavier peat profiles. Here, gentle smoke nestles in with tropical fruit, citrus peel and baking spice brightness.
Celebrated as Islay’s farm distillery, family-run Kilchoman was one of the first makers in the ‘new wave’ of Scotch whisky producers, setting up operations at Rockside Farm back in 2005. Founder Anthony Wills often speaks about how it was a crazy decision – but his gamble paid off, and today Kilchoman is one of Scotland’s most-loved whisky producers. Fast-forward more than two decades and his wife Kathy runs the visitor centre, and his sons are also heavily involved in the business. Together, they champion a 100% Islay philosophy, even growing their own barley on-site. Essential bottlings to try include Machir Bay, a beautifully balanced peated expression which celebrates the dramatic neighbouring beach, and Rockside, made entirely on-site from seed sowing to bottling.
