The latest expression to join Tasmanian distillery Hobart Whisky’s core range, Pedro Ximénez Solera is made using traditional methods. Just a portion of each cask is bottled before being refilled, continuing the traditional of fractional marriage and maintaining consistency between batches. The distillery is all about making whiskies they’d want to share, and this one definitely fits the bill.
Tasting Note:
Nose: Rich with dates, raisins, red fruits, toffee and melon, with a very subtle tobacco leaf note underpinning the sweetness.
Palate: Creamy and sumptuous with pastries, cooking spices, honeycomb, milk chocolate, and a pleating savoury note.
Finish: Medium to long with lingering dusty chocolate.
