An enchanting and beautifully aged expression from the Isle of Skye’s oldest distillery, Talisker. As well as being aged for over four and a half decades, this experimental release is thought to be the first in the world to make use of ice-fractured casks. The distillery dropped 12 ex-Canadian whisky barrels in the Arctic, exposing them to the extreme elements for 96 hours. They were then transported back to Talisker and used to finish this release. A portion of profits from the sale will be donated to Parley, an organisation that champions marine conservation. Just 2,455 bottles of this highly unusual whisky have been released globally.
Tasting note:
Nose: Dry and mellow with seaweed, sand dunes and a mineral composition along with fig, sultana and prunes.
Palate: Smooth and mouth-filling and initially richly sweet. Pepper develops on the mid-palate before salted caramel and a wisp of smoke comes through.
Finish: Very long, with candle wax, chilli pepper and that faint aromatic smoke.

About Talisker
Talisker is the oldest working distillery on the Isle of Skye and one of Scotland’s most distinctive single malt producers, famed for its maritime character, peppery spice, and gentle peat smoke. Founded in 1830 by brothers Hugh and Kenneth MacAskill in the village of Carbost, Talisker has stood for nearly two centuries as a symbol of rugged island whisky-making. Its remote coastal location, salt-laden air, and traditional production methods combine to create a flavour profile that is unmistakably its own.
The distillery’s history has not been without challenges, fires, rebuilds, and changes in ownership have all shaped Talisker’s journey. Today, it is owned by Diageo and forms part of their prestigious Classic Malts range, representing the Island category. Despite modernisation, Talisker has retained many of its traditional techniques, ensuring continuity of style.
One of Talisker’s defining features is its five stills, two wash stills and three spirit stills, each fitted with worm tub condensers. Worm tubs, which cool the spirit in coiled copper pipes submerged in water, contribute to a weightier, more full-bodied spirit. The distillery also uses a unique partial triple distillation process, which helps produce Talisker’s trademark peppery “snap” on the palate.
The lightly peated malt used at Talisker typically registers around 18–22ppm (phenol parts per million), giving a smoky backbone that is more subtle than heavily peated Islay whiskies but still unmistakable. Combined with the influence of the sea and the worm tubs, this results in a spirit that balances smoke, spice, fruit, and maritime salinity.
Flavour-wise, Talisker is often described as “made by the sea”. The nose typically reveals maritime salt, bonfire smoke, and orchard fruit, while the palate delivers a combination of sweet malt, black pepper, citrus zest, and warming spice. The finish is long and warming, with lingering smoke and sea salt.
Talisker pairs beautifully with food, its briny edge complements shellfish, smoked salmon, and robust cheeses, while the peppery heat works well with chargrilled meats.
