HSE is celebrated for its combination of deep Caribbean heritage, meticulous production methods, and innovative cask ageing techniques that have pushed rhum agricole into new territory.
The story of HSE begins in the late 19th century, when the site operated as a sugar factory. In 1882, it was purchased by Amédée Aubéry, who transformed it into a full-scale rum distillery. Over the decades, HSE became one of Martinique’s standout names, and in the late 20th century, Yves and José Hayot revitalised the brand, investing in modern equipment while honouring traditional methods.
HSE produces rhum agricole, a style distinct from most rums made from molasses. Instead, rhum agricole is distilled from fresh sugarcane juice, which must be pressed within hours of harvest to preserve its vibrant, grassy character. This method is recognised and protected under Martinique’s AOC (Appellation d’Origine Contrôlée) designation, which sets strict standards for cane variety, cultivation, fermentation, distillation, and ageing.
The estate grows its own sugarcane across fertile volcanic soils, benefiting from Martinique’s tropical climate, sea breezes, and distinct micro-terroirs. After harvest, the cane is crushed, and the juice is fermented using controlled techniques to balance fruity esters and grassy freshness. Distillation takes place in traditional Creole column stills, producing a spirit that is aromatic, dry, and complex.
One of HSE’s hallmarks is its cask finish programme, inspired by fine whisky maturation. Beyond traditional ex-bourbon casks, HSE experiments with barrels that previously held sherry, Sauternes, port, cognac, or even prestigious wines from Bordeaux and Burgundy. These finishes impart unique flavour dimensions, a Sauternes finish might bring honeyed apricot notes, while an Oloroso sherry cask adds dried fruit and nutty richness.
HSE has earned numerous international awards and is widely regarded as a bridge between tradition and innovation in rhum agricole. Its ability to produce both classic, terroir-driven styles and modern, cask-finished experiments has attracted a global following among rum enthusiasts and spirits collectors.
